Raspberry Lemon Verbena Gin & Tonic

5-7 fresh Raspberries (save one for garnish)

2-3 Lemon Verbena Leaves (sprig for garnish)

1/4 cup good quality gin

2-3 TBLS fresh lemon juice

2-4 TBLS simple syrup (see recipe below)

3 oz or so of club soda

3-4 ice cubes

Mash the rasberries with the verbena leaves. Add the raspberries, simple syrup, lemon juice, and gin and ice cubes to a cocktail shaker ( I use a Blender Bottle :)  Shake vigorously until cold and mashed up. Pour mix into an 8oz glass and top off with the club soda. Garnish with verbena sprig and raspberry.

*Simple Syrup: Stir one cup each of sugar and water over low heat until sugar dissolves. Bring to a boil, remove from heat and cool. Cover and chill until ready to use.

*this recepie can be easily changed with other fruit and the herb, tyme works really well too. You can strain this drink, but I prefer the fruit pulp to eat afterwards.
