Peach Summer Mimosa
1 peach (I leave the skin on)
1/2 cup frozen orange juice
3-4 ice cubes
1/2 cup sparkling wine-I generally use Spumanti
Add the peach, halved (seed removed, of course :) Frozen orange juice, and ice cubes. Blend in the blender. Gently stir in the sparkling wine. Pour into a pretty vintage glass. Share with a friend and enjoy the summer goodness.
* for a more decadent touch, I have added a dollip of fresh whipped cream. It really makes this mimosa seem like a dreamcicle***Sooo incredibly good :)
*Also, I buy my peaches from Dick Kirchevel (his stand is on hwy 87 S in the month of August) and freeze them for the winter. I cut them in half---take out the seed, put cut side down on a cookie sheet, freeze for an hour or so and put into gallon size freezer bags. Then I can enjoy the summer goodness in the depth of a Montana winter :)
